I love the anticipation leading up to Christmas. I love all of the traditions, events, decorations, and most of all; seeing my family and friends. It passes by so quickly that I can’t believe that we are only THREE days away from Christmas already! These clementine spritz cookies are great because they make up a lot of cookies! They are used for both neighbor gifts and a perfect filler on a Christmas cookie tray for parties. If you make these and think the icing isn’t important, just as a warning, I one hundred percent think that the part of this cookie with the most clementine flavor was the icing.

Ingredients:
- 1 ½ cups butter, softened
- 1 ½ cups sugar
- 1 tsp. baking powder
- 1 egg
- 2 tsp. clementine zest
- ½ tsp. almond extract
- 3 ½ cups all-purpose flour
- Clementine Icing (recipe follows)
Directions:
Preheat oven to 375 degrees Fahrenheit.
Beat butter on medium for 30 seconds. Add sugar and baking powder; beat until combined, scraping bowl as needed. Beat in egg, zest, and almost extract. Beat in flour.
Force dough through a cookie press onto an ungreased baking sheet. Bake 7 to 9 minutes or until edges are firm but not brown.
Remove; cool on a wire rack.
Drizzle with clementine icing. Let stand until set.
Clementine Icing Recipe:
In a small bowl stir together 1 ½ cups powdered sugar, ½ tsp. clementine zest, and 2 Tbsp. clementine juice. If needed, stir in additional clementine juice, 1 tsp. at a time to reach drizzling consistency.
