3 Ingredient Peanut Butter Cookies

Baking is a comfort to me. In good times, I bake to celebrate. In hard times, I bake to feel nostalgic. This week has been full of emotions for me so baking tonight helped my mental state immensely. To feel that warmth and to have a delicious treat, I tested out this three ingredient peanut butter cookie. It tasted delicious! The main noticeable difference is that the cookie is more crumbly than a traditional peanut butter cookie.

If you are short on time or want an easy snack, I highly recommend making a batch of these up!

S’mores Please

As I write this I am cuddled up in a cabin with the wind going crazy outside and I have one thing on my mind, S’mores. The delicious fireside snack that is synonymous with campouts, campfires, and sticky finger memories. As the sweet treat occupies my mind (and seemingly far away in reality with the current weather), I instead wondered about the origins of the S’more. While there is some debate surrounding the actual origins, the most common story was that the recipe for a S’more was originally published in a Girl Scout Guidebook under the name “Some More” in 1927. It’s unsure of when it turned from “Some More” to “S’more” but the camping treat is sure to be a beloved treat by many.

It has also become increasingly popular to put a twist on the classes S’more! One of my favorite variations is to use a Reese’s Peanut Butter Cup instead of a Hershey’s Chocolate Bar. I have had friends who have exchanged the classic graham cracker sandwiching material in place of other cookie varieties such as Oreos, Milano Cookies, or some homemade Chocolate Chip Cookies.

Gingerbread Cutout Cookies

Happy December Eve everyone! I hope you are all as excited as I am for the upcoming month leading up to Christmas. I was so excited for the traditions to begin that I decided to make this Gingerbread Cutout Cookie while we put up our Christmas tree. It might be a little out of eagerness for the upcoming 12 days of cookies tradition! While the house filled with the sweet smell of spiced cookies, we happily sang along to Christmas music and decorated. Normally we don’t have gingerbread cookies during the tree setup but I’m sensing a new tradition!

Chocolate Fondue – Date Night

Our fondue date night wouldn’t have been complete without a sweet concoction! We both have a sweet tooth so after we had a little break from our savory fondue selection (check out the recipe here), we were ready for chocolate. This came together super quick and we set it up on our living room table to snack on while we watched a move. Talk about a perfect night!

Christmas Cookies in July – Gingerbread Crackle

Christmas in July got brought to a new level last year when my mom and I made cookies while wearing our matching Christmas baking shirts and sang along to all the great holiday songs. We could smell the foundation of a new tradition right along with the root beer (Make sure to check out the Root Beer Sandwich Cookies from last year)! This year we planned on making the “Christmas Cookies in July” on July 25th, exactly 6 months or 153 days until Christmas! But who’s counting right? 😉 That’s exactly what we did, but in all the crafting and baking from the weekend this post got delayed a few days. Now it’s 151 days until Christmas, so even better news for a Monday!

We played around a lot with making a summer flavored cookie like orange creamsicle or lemon. What we landed on screams Christmas, a gingerbread cookie. This Gingerbread Crackle Cookie is the spiced equivalent of my favorite chocolate crackle cookies. I’m tough on my gingerbread cookie rating and this one exceeded my expectations!

Chocolate Peanut Butter Chip Cookie Recipe

We have all heard of chocolate chips but peanut butter chips might be a game changer. That’s right, we are talking sliced bread game changer status here!! Okay, well maybe it’s just me but this is exciting stuff! I fell in love when they were in a trail mix I tried out from Target (Archer Farms Peanut Butter Monster Trailmix). While grabbing some items from the baking aisle the other day, I saw the Reeses peanut butter chips and had to buy them. What can I say, my sweet tooth couldn’t resist!

May The 4th be With You

Calling all Star Wars fans, this is our day! Growing up with an older brother, I got an appreciation of the Star Wars franchise from an early age. In fact my Star Wars and Jurassic Park fandom stem from watching the movies with my brother anytime they were on (and frequently in between on VHS/DVD) and enjoying the time with him. To this day I’ll never turn down watching the original trilogy; especially Episode VI which is my favorite! Today has been filled with Darth Vader and R2D2 pancakes, cookies, and watching a movie or two. The makings of a perfect Star Wars Day celebration for our little family.

4 Ingredient Nutella Mug Cake

Is there anything better than a single serve mug cake when you are craving something sweet? Lucky for me, Nutella is always stocked up at our house because of my boyfriend’s love for it. I’ve made mug cakes in the past but with my pantry being a little low on bakery items, I decided to test out a simpler recipe. I am absolutely in love with how this fluffy Nutella mug cake turned out!

P.S. What you can’t see in the photo is where I snuck a bite before covering it up with whipped cream for photos. I couldn’t help myself! 😉
