8th Day Cookie – Pistachio Balls

It’s 8 days until Christmas and today’s cookie was super easy and fun to make! A drop cookie like this makes for the perfect weekday snack but still works wonderfully as gifts for neighbors/coworkers. The flavor profile of pistachio was exciting for us since we usually don’t work with pistachio in treats, we are normally eating them straight out of the shell! I’m hit or miss on pistachio but I did thoroughly enjoy this cookie with a hot cup of tea.

Does anyone else feel like this holiday season is flying by? I keep reminding myself to slow down and enjoy every moment, especially because it’s my favorite time of year. One of my favorite traditions is to see the Nutcracker ballet with my mom. As soon as we see that, it is officially the Christmas season for me! 9th Day Cookie – Chocolate Covered Minty Cookies

Drumroll please…Hello second day of the “copycat girl scout” series! It is 9 days before Christmas and these sweet treats were the perfect fill for a Monday night. Especially after a late Monday work night. The key is planning with this Christmas cookie tradition. I knew today would be a late one so the dough was made before work and chilled until I was able to be off work. Then it was as simple as slicing and throwing in the oven! Slice and bakes are perfect for busy days, well as long as the dough is made the night before or morning of. While making these (and tasting these), next time I would make sure to cut closer to 1/8 inch slices for a true Thinmint copycat. 10th Day Cookie – Chocolate Peanut Butter Cookie

It’s 10 days before Christmas and I am beyond excited! I try to savor every moment of this time of year because I adore every little detail. I love the way the snow is illuminated by the house lights, I love how stores are filled with people shopping for someone they care about (sometimes you can catch when a stranger finds that perfect gift and their face lights up), and I love how the 12 days of cookies is an excuse to have a sweet treat everyday. 😉 This cookie is the start of a mini “copycat girl scout cookie” grouping. Ours didn’t turn out quite the same but that’s from drizzling with chocolate instead of coating the cookie entirely. We did cover two cookies entirely with chocolate and it did taste like a Tagalong girl scout cookie, so good!

11th Day Cookie- Peppermint Macaroons

Is there a flavor more akin to Christmas than peppermint? I mean think about it, every year people go crazy for the Starbucks Peppermint Mocha (Including me) and stores have an array of treats from peppermint candy canes to peppermint hot cocoa. You’ll notice candy canes are sprinkled on this sweet treat but not just any candy cane… it’s topped with a crushed green, red, and white striped candy cane; my personal favorite! Even though I know it is the same flavor as the red and white striped, something about adding that extra Christmas color of green makes the candy cane taste better.  Side note, has anyone tried the kale candy cane that I heard about this year? While trying to remember what vegetable it was, I also stumbled across a rotisserie chicken flavored candy cane… so many questions.

Sweetest Time of the Year

Today kicks off the sweetest time of the year. Our annual 12 Days of Cookies starts today! I repeat, we are 12 days away from Christmas! This is not a drill! We are so excited to be sharing our tradition on the blog again this year. With the crazy schedules around this time of year, keeping this tradition alive has been so important to us. This year we did have a hard time narrowing down the new cookies to try. We tried to make sure there are different flavor profiles, but a lot of times the chocoholic in us won out.  This first cookie is compliments of Better Homes & Garden’s magazine. Cinnamon Roll Cookie Makeover

My ideal morning is waking up to a hot cup of coffee and a warm cinnamon roll. To add a new spin, these are cinnamon roll cookies that taste delicious dunked in a hot cup of coffee (tried and true!). It’s okay to have cookies for breakfast if it’s these right? One of the components to this cookie that might make it taste the most like the sweet bread is the addition of yeast to the dough mixture. It’s been a busy day of Christmas activities, so we made the dough and rolled them before throwing the logs into the refrigerator and heading off to lunch and then the Nutcracker ballet. Once we got home we sliced and baked these fun treats.

Cinnamon Chips + Cookies = A Perfect Pair

Has anyone ever heard of Cinnamon Chips before? I have not so this discovery is revolutionary! This cookie combines cinnamon chips and one of the most underused spices in baking (in my opinion), Cardamom. The combination of the two adds new flavor and depth to the normal snickerdoodle cookie dough recipe. Cardomom adds an additional spicy component and accentuates cinnamon when used. Is there a baking chip you have found that was amazing to you?

Gingerbread Love

Whoever created gingerbread is a genius! Thankfully for everyone on this blog, my other passion is history so I went on a quick research adventure to learn more about the spiced treat (While of course snacking on some gingerbread of my own). Although ginger originates in Asia, most of the credit to today’s popularized “gingerbread” flavors seems to be by the Europeans in the middle ages. Elizabeth I is mostly credited with decorating cookies into “gingerbread men” after having some made that resembled guests. Even better, George Washington’s mother, served gingerbread to the Marquis de Lafayette and the confection was passed down for generations in the family (I recently finished Washington by Ron Chernow so this fact made me quite excited to learn).

It’s a Pie! It’s a Cookie! It’s a Pie Cookie!

There are so many different pies that we make at Thanksgiving! Pumpkin, Apple, but my favorite is Pecan Pie. Cold Pecan Pie is my after Thanksgiving snack, and what I have when I take a break decorating the Christmas tree. But wait, it’s not Thanksgiving, it’s almost Christmas! What are we doing talking about pies then? Well, the cookie on the 7th day before Christmas we are making pecan pie thumbprint cookies.

Minty Fresh Christmas Cookies

It’s 8 days before Christmas and my dreams are in cookies. After this recipe, tonight I hope to drift off to powdered sugar capped mountains filled with giant versions of these peppermint cookies. My dad loves candy canes, but more specifically his favorite are the green and red striped peppermint ones. He says they aren’t ripe until they have both the green and red stripes (I think it might be his favorite too because they look extra festive with both bold colors). In my dreamy candy world, you can be sure that ripe candy canes grow everywhere like weeds.
