It’s 8 days until Christmas and today’s cookie was super easy and fun to make! A drop cookie like this makes for the perfect weekday snack but still works wonderfully as gifts for neighbors/coworkers. The flavor profile of pistachio was exciting for us since we usually don’t work with pistachio in treats, we are normally eating them straight out of the shell! I’m hit or miss on pistachio but I did thoroughly enjoy this cookie with a hot cup of tea.
Does anyone else feel like this holiday season is flying by? I keep reminding myself to slow down and enjoy every moment, especially because it’s my favorite time of year. One of my favorite traditions is to see the Nutcracker ballet with my mom. As soon as we see that, it is officially the Christmas season for me! Comment below with a tradition that makes you feel the Christmas season has started!
