8th Day Cookie – Pistachio Balls

It’s 8 days until Christmas and today’s cookie was super easy and fun to make! A drop cookie like this makes for the perfect weekday snack but still works wonderfully as gifts for neighbors/coworkers. The flavor profile of pistachio was exciting for us since we usually don’t work with pistachio in treats, we are normally eating them straight out of the shell! I’m hit or miss on pistachio but I did thoroughly enjoy this cookie with a hot cup of tea.

One of my favorite traditions is to see the Nutcracker ballet with my mom. As soon as we see that, it is officially the Christmas season for me! Ingredients:

  • 1 cup butter, softened
  • ¼ cup granulated sugar
  • ¼ cup brown sugar, packed
  • ½ tsp. orange zest
  • ¼ tsp. salt
  • 2 tsp. vanilla
  • 2 cups all-purpose flour
  • 1 cup finely chopped pistachio nuts
  • Powdered sugar

Directions:

Preheat oven to 350 degrees Fahrenheit.

In a large bowl beat butter with a mixer on medium 30 seconds. Add both sugars, zest, and salt; beat until combined, scraping bowl as needed. Beat in vanilla. Beat in flour. Stir in pistachios.

Shape dough into 1-inch balls. Place 1 inch apart on an ungreased cookie sheet.

Bake 12 minutes or just until bottoms begin to brown.

Remove to cool on a wire rack.

Toss cookies in powdered sugar to coat.
