12 Days of Cookies 2020 Edition – Peanut Butter and Oreo Brookies

We weren’t sure if we were going to be able to continue our annual tradition of 12 Days of Cookies leading up to Christmas because… well… 2020. However, with all the events in 2020 cancelled, I’m happy to announce that our families 12 Days of Cookies will continue this year! It might feel a little different but with extra precautions in place, we decided it was a tradition we could keep this holiday season.

What better way to start out with a gooey, crunchy flavor explosion! I’ve made a brookie in a brownie pan, so putting that into a bite sized cookie seems like quite possibly the best idea since sliced bread! This one was a hit because not only was it a nice gooey chocolate brownie, but it is combined with a peanut butter cookie that has actual peanuts for a crunch. This one will be hard to beat, but there are 11 more days so we will see!

Gingerbread Cutout Cookies

Happy December Eve everyone! I hope you are all as excited as I am for the upcoming month leading up to Christmas. I was so excited for the traditions to begin that I decided to make this Gingerbread Cutout Cookie while we put up our Christmas tree. It might be a little out of eagerness for the upcoming 12 days of cookies tradition! While the house filled with the sweet smell of spiced cookies, we happily sang along to Christmas music and decorated. Normally we don’t have gingerbread cookies during the tree setup but I’m sensing a new tradition!

Christmas Cookies in July – Gingerbread Crackle

Christmas in July got brought to a new level last year when my mom and I made cookies while wearing our matching Christmas baking shirts and sang along to all the great holiday songs. We could smell the foundation of a new tradition right along with the root beer (Make sure to check out the Root Beer Sandwich Cookies from last year)! This year we planned on making the “Christmas Cookies in July” on July 25th, exactly 6 months or 153 days until Christmas! But who’s counting right? 😉 That’s exactly what we did, but in all the crafting and baking from the weekend this post got delayed a few days. Now it’s 151 days until Christmas, so even better news for a Monday!

We played around a lot with making a summer flavored cookie like orange creamsicle or lemon. What we landed on screams Christmas, a gingerbread cookie. This Gingerbread Crackle Cookie is the spiced equivalent of my favorite chocolate crackle cookies. I’m tough on my gingerbread cookie rating and this one exceeded my expectations!

Final Day of Christmas Cookie Countdown 2019 – Caramel Coconut Bars

Thank you for following us for these last twelve days as we made these cookies and upheld a cherished tradition between my mom and I. There are some traditions that make your heart feel so happy and full. Laughing at our silly inside jokes, singing Christmas carols, and talking to my mom in the kitchen during these 12 days of cookies does just that for me. With a very thankful and full heart (and stomach with all these cookies), I’m excited to wish everyone reading this a very Merry Christmas!

3rd Day of Cookies – Clementine Spritz

I love the anticipation leading up to Christmas. I love all of the traditions, events, decorations, and most of all; seeing my family and friends. It passes by so quickly that I can’t believe that we are only THREE days away from Christmas already! These clementine spritz cookies are great because they make up a lot of cookies! They are used for both neighbor gifts and a perfect filler on a Christmas cookie tray for parties. If you make these and think the icing isn’t important, just as a warning, I one hundred percent think that the part of this cookie with the most clementine flavor was the icing.

4th Day Christmas Cookie – Salted Caramel Chocolate Chip Cookie

We have 4 days until Christmas and I am really excited to be sharing this cookie next! What I love about it is that it is a twist on the classic chocolate chip cookie with the addition of the chopped Rolo candies. Plus, it is a simple drop cookie so no chill or roll time is needed! When it comes to drop cookies, the best tool invented is the cookie scooper. It is similar to an ice cream scoop but it has a piece of metal that moves to drop the dough out of the scoop and onto the baking sheet. If you don’t have one yet, I would highly recommend getting one. Our cookie scoop size is 1 ½ Tablespoons we use it for almost every cookie we make.

5th Day Christmas Cookie – Glazed Apple Oat Cookies

This apple spiced cookie is reminiscent of the flavors you would find in an apple pie; so warm and cozy. It’s perfect for a cold winter night, especially when that winter night is only 5 days away from Christmas! As of today, I have officially finished all of my Christmas shopping. Now all I need to do is wrap the gifts. I enjoy wrapping gifts at this time of year though. Wrapping gifts is almost therapeutic for me around Christmas. A fun Christmas movie on and a big cup of hot coffee while I wrap makes for a relaxing night. How do you feel about wrapping?

6th Day Cookie – Caramel Stuffed Ginger Cookies

Is there anything better than stuffing a cookie with caramel?? This one immediately caught our eye with the stuffed caramel (again, YUM), and also the crystallized ginger in it. This is our gingerbread cookie for the year so I was especially excited that the crystallized ginger made the flavor pop in the best way.  There are only 6 days until Christmas and we are halfway through our 12 days of cookies! 7th Day Cookie – Citrus Meltaways

We have had a few different flavors this 12 days of cookies so far. I’m sure you’ve noticed A LOT of them are going to have chocolate in them, #notsorry! 😉 This is the first citrus cookie of this year’s 12 days of cookie tradition. There is a pick between different citrus fruits or you can combine if you are daring. We went with orange because it is our favorite citrus flavor and it reminds us of the Christmas season. Since I was little my dad would always bring home a case of oranges during Christmastime. He got the tradition from his dad.
