Christmas Cookies in July – Loaded S’mores Cookies

Is it even July if I don’t have a post about Christmas cookies?? If you are new to the blog, cookies are probably the favorite baked item and Christmas is easily the holiday with the most content on here! My mom and I have a tradition of the 12 Days of Cookies leading up to Christmas, if you want to read more about the 2020 cookies check out some of these popular cookies from last year (Peanut Butter and Oreo Brookies, Pecan Pie Bars)! These cookies will 100% be made again, probably this weekend they were that good! These have the crunch and chew of a good s’more, and don’t worry they are LOADED with chocolate and marshmallows. Definitely the perfect summer cookie to make!

10th Day of Cookie – Marbled Pudding Thumbprint Cookies

This cookie stood out to try because it looked super easy and the biggest bonus… we already had the ingredients! I always love when we have the ingredients for a cookie! At my house, vanilla pudding mix is a staple for one reason: cinnamon rolls. My cinnamon roll dough uses vanilla pudding mix and you never know when you need to make a batch right? We were right about this cookie, it was fun and came together beautifully. The smooth pudding with the crumbly vanilla and chocolate cookie made for an enjoyable combination.

What better time than two days before Christmas and on a day off work! These cute little treats are going to be used for a Christmas get together with both my boyfriend and mine families tonight. 4th Day Christmas Cookie – Salted Caramel Chocolate Chip Cookie

We have 4 days until Christmas and I am really excited to be sharing this cookie next! What I love about it is that it is a twist on the classic chocolate chip cookie with the addition of the chopped Rolo candies. Plus, it is a simple drop cookie so no chill or roll time is needed! When it comes to drop cookies, the best tool invented is the cookie scooper. It is similar to an ice cream scoop but it has a piece of metal that moves to drop the dough out of the scoop and onto the baking sheet. If you don’t have one yet, I would highly recommend getting one. Our cookie scoop size is 1 ½ Tablespoons we use it for almost every cookie we make.

5th Day Christmas Cookie – Glazed Apple Oat Cookies

This apple spiced cookie is reminiscent of the flavors you would find in an apple pie; so warm and cozy. It’s perfect for a cold winter night, especially when that winter night is only 5 days away from Christmas! As of today, I have officially finished all of my Christmas shopping. Now all I need to do is wrap the gifts. I enjoy wrapping gifts at this time of year though. Wrapping gifts is almost therapeutic for me around Christmas. A fun Christmas movie on and a big cup of hot coffee while I wrap makes for a relaxing night. How do you feel about wrapping?

6th Day Cookie – Caramel Stuffed Ginger Cookies

Is there anything better than stuffing a cookie with caramel?? This one immediately caught our eye with the stuffed caramel (again, YUM), and also the crystallized ginger in it. This is our gingerbread cookie for the year so I was especially excited that the crystallized ginger made the flavor pop in the best way.  There are only 6 days until Christmas and we are halfway through our 12 days of cookies! 8th Day Cookie – Pistachio Balls

It’s 8 days until Christmas and today’s cookie was super easy and fun to make! A drop cookie like this makes for the perfect weekday snack but still works wonderfully as gifts for neighbors/coworkers. The flavor profile of pistachio was exciting for us since we usually don’t work with pistachio in treats, we are normally eating them straight out of the shell! I’m hit or miss on pistachio but I did thoroughly enjoy this cookie with a hot cup of tea.

Does anyone else feel like this holiday season is flying by? I keep reminding myself to slow down and enjoy every moment, especially because it’s my favorite time of year. One of my favorite traditions is to see the Nutcracker ballet with my mom. As soon as we see that, it is officially the Christmas season for me! 9th Day Cookie – Chocolate Covered Minty Cookies

Drumroll please…Hello second day of the “copycat girl scout” series! It is 9 days before Christmas and these sweet treats were the perfect fill for a Monday night. Especially after a late Monday work night. The key is planning with this Christmas cookie tradition. I knew today would be a late one so the dough was made before work and chilled until I was able to be off work. Then it was as simple as slicing and throwing in the oven! Slice and bakes are perfect for busy days, well as long as the dough is made the night before or morning of. While making these (and tasting these), next time I would make sure to cut closer to 1/8 inch slices for a true Thinmint copycat. 10th Day Cookie – Chocolate Peanut Butter Cookie

It’s 10 days before Christmas and I am beyond excited! I try to savor every moment of this time of year because I adore every little detail. I love the way the snow is illuminated by the house lights, I love how stores are filled with people shopping for someone they care about (sometimes you can catch when a stranger finds that perfect gift and their face lights up), and I love how the 12 days of cookies is an excuse to have a sweet treat everyday. 😉 This cookie is the start of a mini “copycat girl scout cookie” grouping. Ours didn’t turn out quite the same but that’s from drizzling with chocolate instead of coating the cookie entirely. We did cover two cookies entirely with chocolate and it did taste like a Tagalong girl scout cookie, so good!

It’s a Pie! It’s a Cookie! It’s a Pie Cookie!

There are so many different pies that we make at Thanksgiving! Pumpkin, Apple, but my favorite is Pecan Pie. Cold Pecan Pie is my after Thanksgiving snack, and what I have when I take a break decorating the Christmas tree. But wait, it’s not Thanksgiving, it’s almost Christmas! What are we doing talking about pies then? Well, the cookie on the 7th day before Christmas we are making pecan pie thumbprint cookies.
