Christmas Cookies in July – Loaded S’mores Cookies

Is it even July if I don’t have a post about Christmas cookies?? If you are new to the blog, cookies are probably the favorite baked item and Christmas is easily the holiday with the most content on here! My mom and I have a tradition of the 12 Days of Cookies leading up to Christmas, if you want to read more about the 2020 cookies check out some of these popular cookies from last year (Peanut Butter and Oreo Brookies, Pecan Pie Bars)! These cookies will 100% be made again, probably this weekend they were that good! These have the crunch and chew of a good s’more, and don’t worry they are LOADED with chocolate and marshmallows. Definitely the perfect summer cookie to make!

Ingredients:

  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 ½ cups all-purpose flour
  • 2 tsp. cornstarch
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups mini marshmallows
  • 9-10 graham crackers, broken into small pieces
  • ½ cup milk chocolate chips
  • ½ cup mini semisweet chocolate chips
  • 2 Hershey’s bars, broken into small pieces

Directions:

Preheat oven to 375 degrees Fahrenheit. Prepare baking sheet with parchment paper.

Beat butter with sugars until creamy, about 2-3 minutes.

Add eggs, vanilla and mix until incorporated.

Mix in flour, cornstarch, baking soda, and salt until the mixture is just combined.

Carefully fold in the marshmallows, chocolates, and graham crackers.

Scoop prepared cookie dough onto prepared baking sheets, leaving about 2 in. between cookies.

Bake for 12-14 minutes or until light golden brown.

Let sit on baking sheet for 3-5 minutes before transferring to cooling rack to cool completely.
