Spring Brunch Recipes

My fiancé and I were in charge of the May brunch tradition with his family this year. If you haven’t already checked out the table décor and some tips for table arrangements, the link to that post is here. We have been abnormally busy this May and that led to a few last minute decisions, such as what to even make! Thankfully Pinterest and Google came through for us and we landed on the following four recipes.

All of these recipes turned out wonderful! Including the Eggs Benedict where I: 1) Made my first Hollandaise sauce, and 2) Poached eggs for the first time! The recipe for the Eggs Benedict used a different technique for poaching eggs from what I have seen previously where you lower the eggs gently into the simmering water with a measuring cup. It worked great for me, well until I started rushing at the end as people arrived so I had a few eggs that weren’t as perfect.

Valentine’s Day Brunch

Even though it is the last day of February, I had to make sure I shared our brunch this month because it turned out AMAZING! You’ll notice the item we focused on the most from Valentine’s Day is the iconic heart shape. We used it for the finger sandwiches, the strawberry pastries, and even attempted to give the sausages a heart shape! This felt like the most successful one since our Halloween themed brunch back in 2019; that one still taking the first place spot because of the decorations.

MOM-osa’s and Brunch

My mom is incredible. She is patient, kind, loving, and I’ve always said if I’m half the woman she is then I’ll be alright. Not only does she put up with my silly puns but she will laugh (maybe with some pity) at every single one. She listens intently to my stories as I tell 5 other stories within it and we never go a day without talking. Without a doubt, I wanted to spoil her on Mother’s Day.

Another thing her and I have in common? A love of breakfast foods! We had a small brunch at the house for Mother’s Day where I cooked up a feast. Two of the recipes I did were new, and one is tried and true classic. The tried and true is my berry french toast, SO much goodness packed into a breakfast casserole. The new recipes also amazed and as my boyfriend ate some leftovers later in the day insisted I make them both at the next brunch we host with his family. The new recipes were Ricotta Pancakes and a Savory Monkey Bread. I 100% agree with him, they were delicious! What is brunch without mimosa’s too? Or in this case… MOM-osa’s! This fun little pun on the name was a huge hit with my mom and we sipped and laughed about it throughout the meal. Below is the recipe for my tried and true berry french toast.

Breakfast Meal Prep – Egg Cups

Happy New Year Everyone! I hope you had a wonderful holiday season, and now I hope you have some resolutions that you are excited about. I love New Year’s resolutions. What better way to start the year than wanting to improve on your already awesome self! Better yet, what better way to start each month than to create goals for yourself. That is what I try to do. Of course I have my big overarching year resolutions but each month I give myself a mini resolution to do. For January this year it was to get back to planning my boyfriends and mine meals. I was doing great all of 2019 but then October hit and well… our schedules got even busier and the priorities realigned.

I have seen these cute little egg cups recommended as a breakfast meal prep all over pinterest. Truth be told, I had one absolute FAIL about a year and a half ago on egg cups so I have been scared to try them again. Until now! These turned out great! My preference was the Turkey Spinach, but the Italian in me has a soft spot for the Caprese.

Savory Stuffed Breakfast Biscuits

This stuffed biscuit does not scream Halloween or even fall but I wanted to create a savory dish for our brunch. If you haven’t already, check out the Halloween Themed Brunch post where I talk about why and how we pulled it off. I would equate the taste of this biscuit to a homemade Jimmy Dean sausage sandwich but in the best way (and I personally love those). This was an easy dish to make and if you want to save even more time, try making the biscuit dough in the food processor!

Waffle Love

“We have to remember what’s important in life: friends, waffles, and work. Or waffles, friends, work. But work has to come third.” – Leslie Knope from the show Parks and Recreation. This is really about the truest quote that I have seen recently. Work is important, yes but friends and well… food are the true zest of life. My friends and family are my backbone and support me in every decision (good or bad) that I have made. The perfect combination is a brunch or a breakfast with those people I care so much about. Today, I made my boyfriend some waffles and thought of this quote. I hope you all enjoy work but remember what should come first: Friends and Waffles!
